cooking: week ??

October was maddeningly crazy so cooking went out the window. We ate a lot of pizza. Now that things are slowing down for the winter season, we’re back to cooking.

We started with chicken tortilla soup. I’ve had this recipe about a year and a half and just never got around to trying it. The best thing about it is that you make it in the slow cooker…and it is SO GOOD and SO EASY.

I didn’t take pictures while making it, because I mainly just opened a bunch of cans and dumped stuff in the crock pot. The recipe calls for cooked/shredded chicken, but after reading reviews, I just put in raw chicken breast tenders and pulled them apart later. Other people used frozen chicken. It doesn’t get any easier than that.

I made substitutions…raw chicken instead of cooked, all chicken broth instead of water, threw in a can of black beans for extra protein and extra YUM, used a can of diced tomatos instead of mashing up a can of whole ones (which is extra YUCK), only used half an onion and it was plenty, skipped the corn because it’s expensive at sprouts, and threw in tortilla chips instead of making my own strips (lack of time).

But I’m sure it’s fine the way it’s written. : )
